The reason the modern church doesn’t share the assumption that the bible would be written in a way that the average person would understand is because it needs to distance itself from all the crap contained therein by reinterpreting it. No no no, the earth isn’t really 6000 years old, it doesn’t literally have 4 corners, there wasn’t actually a global flood, Noah didn’t literally have 2 of every animal on the arc… and so on, and on, and on. Hermeneutics where religious texts is concerned is largely about whitewashing the things most modern people recognize as bullshit.
